She personifies the very spirit of the wilderness, assuming the esteemed mantle of the goddess of the hunt and protector of the wild inhabitants that roam the untamed mountainous landscapes.
Possessing unparalleled beauty and power, Dali resides on the peaks of high mountains and in dense forests, where her presence is felt in every breath of wind and every rustle of leaves. She guards the forests, fields, and mountain trails, ensuring that hunters and shepherds respect the laws of nature.

Thus, Dali is not merely a mythical figure but also a powerful symbol that embodies the spirit of the Caucasus and the heritage of the Georgian people, their connection with the land, nature, and the animal world.

Our entire chacha production process takes place in Kakheti, Georgia, and we are proud of everything we do.
Our
story

We are not the first to produce chacha, and we did not invent it, but we have perfected it.
We use time-tested methods to create the best chacha in the world.
We carefully monitor the ripening of the grapes to achieve optimal sugar content. The grapes are harvested by hand to gently pick the clusters. After that, the berries are carefully crushed, and the juice is poured into clay vessels (kvevri) for fermentation.
DALI puts more physical effort into the process than any other chacha producer in the world.
The fermentation of the mixture lasts several months, then distillation is carried out in small batches. Each signature DALI bottle is crafted to perfection.
Our distillate is bottled, but attention to detail does not stop there. We use natural Portuguese cork from cork oak bark, topped with a French oak cap, and the bottle is designed and crafted by the best European craftsmen— everything must be perfect.

ChaCha
Dali
CHACHA DALI is a strong alcoholic beverage produced in Georgia.
This chacha is made from 100% grapes grown in the Kakheti region of Georgia. It undergoes multiple distillations in small batches to create our super-premium chacha without additives.
CHACHA DALI is not aged in barrels, which allows it to retain a fresh and clean taste. The drink has a strong fruity aroma with grape notes. The alcohol content in chacha is 40%. Chacha is perfect as a neat beverage, as well as for making various cocktails.
The production of chacha begins with the careful selection of ripe grapes. After harvesting, the grapes are crushed, the juice is fermented and distilled. This process preserves all the unique flavor qualities of the drink.

Spirit

An elegant cocktail with a rich flavour, in which the power of Dali chacha harmoniously combines with the herbal depth of Amaro del Capo and a delicate creamy texture. Light citrus acidity and warm nutmeg flavour make the drink complex and balanced. Suitable for connoisseurs of deep flavours and refined cocktails.
Ingredients:

Dali Chacha — 45 ml

Amaro del Capo herbal liqueur — 25 ml

Fresh lemon juice — 30 ml

Sugar syrup — 15 ml

One egg white or 5 drops of bar foam

Nutmeg — 0.5 g for garnish
Preparation:

Fill the shaker with solid ice cubes.

Pour in the chacha, Amaro del Capo, fresh lemon juice, simple syrup, and egg white (or Easy Foam).

First, perform a dry shake (without ice) for 15 seconds to activate the egg white. Then add ice and shake for another 20–25 seconds.

Strain the cocktail through a fine mesh strainer into a chilled coupette glass.

Grate some fresh nutmeg over the cocktail for flavour and presentation.
A refreshing cocktail with a Georgian character, where the strength of chacha is softened by the spicy notes of red vermouth and the light bitterness of tonic. The citrusy freshness of lemon juice and Angostura adds an elegant complexity to the drink. Perfect as an aperitif or a summer cocktail for evening gatherings.

Orange slices — 25 g

Fill a highball glass to the top with ice cubes.

Pour in the chacha, red vermouth, fresh lemon juice, and add 2 dashes of Angostura.

Carefully add the tonic and gently stir with a bar spoon to maintain carbonation.

Blackberry Accent
This cocktail combines the rich flavor of Georgian chacha Dali with the vibrant berry notes of blackberry liqueur. A touch of citrusy acidity from fresh lemon juice and the silky, velvety texture of egg white create a harmonious balance of sweetness and freshness. Perfect for a relaxed evening or a tasting in cozy company.

Strain the cocktail through a fine mesh strainer into a chilled rocks glass with a large ice cube.
